SPICY ADOBONG ISAW NG BABOY





Adobong Isaw ng Baboy is a popular Filipino dish made from pig intestines, marinated in a mixture of vinegar, soy sauce, garlic, and spices, then grilled or pan-fried. The dish is known for its rich, savory flavor and is often enjoyed as a street food or appetizer.

Instructions:
1. Wash the small intestine with 1/2 cup of vinegar and salt, then rinse with running water. Repeat washing three times.
2. In a cooking pot, place the small intestine, then add 5 cups of water, a tsp of salt, 3 pcs of bay leaf, and peppercorns. Bring to a boil and let it simmer until it becomes tender. Transfer the cooked small intestine to a bowl and let it cool down. Cut it into 2-inch lengths and set aside.
3. Heat oil in a pan, sauté the onion, garlic, and ginger. Then add the cooked small intestine, oyster sauce, soy sauce, and soda (coke). Stir thoroughly.
4. Add the vinegar and bring to a boil and simmer until the sauce is slightly thickened. Add the chopped red chili, then season with salt and ground black pepper to taste. Let it simmer and continue stirring until the sauce almost disappears and becomes oily.
5. Transfer to a serving bowl and serve it hot with rice. Serve and enjoy !
